Since Mr Lucas won't be making any movies set after Return of the Jedi, I'd like to go through the books that have been written post ROTJ that are blessed by Lucas and considered canon.

I'm open to any and all suggestion and would really like it if I had a sense of the order in which they should be read

The next book is "Truce at Bakura".
For an exact time line on all the books, check out any of the latest Star Wars books on the book shelf of you local bookstore. They ususally have a chronology.
There are also Dark Horse comics that fit in the chronology. Dark Empire, I believe it was called, dealt with the clone of the Emperor and Luke turning to the Dark side. That was worth reading. There was also Crimson Empire which I thought was interesting.

Most of the books are good, especially the first three with Thrawn. I became a great fan of the New Jedi Order books also. The series ran a bit long, but it was finally an enemy that was actually a challenge to the Jedi and the Republic.

Get ready because there are TONS of post Star Wars books. AS far as them having the blessings of Lucas, well that does not mean much. He pretty much does not adhere to anything in print if he feels like changing his mind. After all, it is his universe.
