Now that i've felt the desire to dust off my collection and start playing again now that Hammer of Thor is finally here, i'm trying to get caught up to speed on the rules and what not.

I was wondering that say I wanted to use the "Mercenary" feat card on someone like Darkseid in order for them to gain the Avengers TA, then turn around and use the T'Bolts alternate TA in order to make all Avengers wild cards. Would Darkseid or any non-affiliated character (before hand) be able to wild card due to the T'Bolts TA?

No.
Feat allocation is made before the game starts. At that time, Darkseid does not have the Avengers TA, so he cannot be assigned T-bolts.
