See page 16 of the FF rules:

:m-wing: A character with the wing speed symbol is a flier, and has the Flight ability and the Carry ability.

So you can Outwit either Flight or Carry. If you want to counter both, you'll need two Outwitters.

Just to clarify for normalview, the FLIGHT ability is what lets a flier ignore elevation and many types of terrain and other characters when it is moving (though it breaks away normally). FLIGHT does not let the character carry. That would be the CARRY ability (which lets them carry characters with a -2 to their Speed value).
