UNPREDICTABLE OMNIPOTENCE: Before The Joker makes an attack roll, you may choose to declare a number from 1-6. If you do, and if the attack hits and the declared number comes up on either die, increase the damage dealt by 2 (maximum 2). If the declared number comes up on both dice, deal The Joker 2 unavoidable damage after the attack resolves.

If Joker rolls doubles on the number he chose, does he get the +2 damage and take 2 damage, or does he just take the 2 damage?

EMBIGGEN: The Joker has the {Giant} damage symbol.

Second question. Because Embiggen says the joker has the Giant symbol and not something like the joker can use the giant ability. I'm assuming he also gains the giants ability to carry when they have no tokens on them?

For what it is worth, even if Embiggen did say "use", I don't really see how that would matter as far as carry goes.

You might be able to argue that Joker couldn't use feats that have a :g-giant: symbol prereq... but I think even that would be a stretch.

If your chosen number turns up as double, well, the chosen number still turned up; this meets the conditions for the first effect. The "maximum 2" indicates that you can't double down, but that doesn't stop that first 2 damage from occuring.

It just so happens that there is now an additional effect on top of the first when doubles are rolled.

1) one or the other. the single number activates the plus 2 for damage, and the doubles means he takes the 2 damage, one or the other not both.

2)because joker "has" the gaint symbol, I think it's safe to say that he also posseses it. Yes he can use giant stride.

YEESH not only do I type as slow as the sap flows but I've been using joker's UO totally wrong this whole time... The judges never said anything... shhhhhhh
